Non-Dairy Crumbly Cheerios Cookies

Whether you eat a dairy-free diet or not, these delicious crumbly cookies are worth trying.
Ingredient List
- 2 cups Cheerios Cereal
- 1/2 cup pecans
- 3/4 cup quinoa flour
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup coconut oil
- 1/3 cup white sugar
- 1/3 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
Preparation
- Preheat the oven to 350 °F.
- In a food processor, process the Cheerios and pecans with the quinoa flour, cinnamon and salt.
- Add the coconut oil, the sugars, egg and vanilla. Process until a dough has formed. Transfer to a container and lightly knead the dough with your hands to form a ball.
- Use a spoon to scoop out dough balls. Arrange them, with space between each one, on a baking sheet lined with a silicone baking mat or parchment paper. Bake for 10-12 minutes, or until slightly golden brown. Let cool on the baking sheet before transferring to a cooling rack.
